Kooki Sushi

By replacing such ingredients as ikura (salmon roe) with apricot gummi, maguro (tuna) with strawberry flavored chocolate, lemon meringue for tamago (egg) and coconut for tako (octopus), Koo-Ki Sushi has created a unique and wholly new style of sushi - a confection!

These along with other ingredients such as white almonds, green tea, rice cookies, dark chocolate and caramel are used to trick the eye into seeing something that looks like sushi but tastes like a sweet treat.

Each edible work of art is carefully pieced together by hand from the sweets. The Sushi is then assembled into imported Japanese obento boxes to complete the effect.

Prices are in the $20-70 range and available for purchase online and from Koo-Ki Sushi's San Jose retail store.
